Recipe | Marinated Cherry Tomatoes with Burrata

Marinated Cherry Tomatoes with Burrata, a colorful platter that’s like summer on a plate. It has the most delicious herb vinaigrette and plenty of sweet summer cherry tomatoes. Serve this fresh summer tomato salad over creamy burrata cheese and add some crusty grilled bread for scooping up all the yummies. This dish is simple to throw together, fresh, and flavorful! A tried and true summer favorite.

INGREDIENTS:

  • 1/2 cup extra virgin olive oil

  • 2 tablespoons balsamic vinegar

  • 2 tablespoons champagne or apple cider vinegar

  • 2 teaspoons honey

  • 1-2 cloves garlic, grated

  • 1/2 cup fresh basil, chopped

  • 2 tablespoons chopped fresh thyme

  • kosher salt and black pepper

  • chili flakes

  • 3 cups cherry tomatoes, halved

  • 2-3 balls burrata cheese, at room temperature

  • grilled bread or crackers, for serving


Prep Time | 15 Minutes

Total Time | 45 Minutes

1. In a bowl, whisk together the olive oil, balsamic vinegar, champagne vinegar, honey, garlic, basil, and thyme. Season to taste with salt, pepper, and chili flakes.

2. Add tomatoes and toss to combine. Allow the tomatoes to marinate for 30 minutes at room temperature or up to overnight in the fridge. Bring to room temp before serving.

3. To serve, break the balls of burrata over a serving bowl. Arrange the tomatoes around the burrata. Serve with grilled or toasted bread.
